Kubo Singapore Review: Fusion Filipino Food @ Duxton

Hey, Faithfuls! If you're looking for a place to experience upscale Filipino food, Kubo Singapore should be on your list. Recently relocated to a cosier spot, Kubo offers a more intimate dining experience that perfectly complements its flavorful and carefully crafted dishes. A friend introduced me to this gem, but I’ll say upfront—it’s definitely a splurge, so be prepared to spend a little extra.

One of the highlights at Kubo is their woodfire cooking, which adds a delightful smokiness to their dishes, truly elevating the flavours. Kubo Singapore prides itself on introducing the rich culinary heritage of the Philippines to Singapore, and trust me, they do it in style!

We kicked things off with the Pork Crackling and Whipped Dip (S$10), a fun and crispy starter. The cassava pulp was perfectly crispy, and the tobiko, smoked eggplant, and miso dip was downright addictive. It’s a great way to whet your appetite for what’s to come.

Next up, we had the Grilled Chicken Wings (S$8). These wings may be small in size, but they’re packed with flavour. The spices were bold, with a blend of savoury and smoky notes, and there was just the right amount of char from the grill. Filipino-style chicken wings typically have a balance of sweet, salty, and garlicky goodness, and these didn’t disappoint!

Then came the Burrata with Smoked Tomato and Basil Dressing (S$16), which sadly was a bit of a letdown. The dish featured a massive, juicy tomato with burrata surrounding it, but I was hoping for more burrata and less tomato. The burrata wasn’t the star of the show, and the dish felt a bit messy overall.

The Mackerel with Grilled Zucchini (S$16), on the other hand, was fantastic. The mackerel was soft, tender, and just melted in my mouth. The accompanying puree had this creamy, yoghurt-like texture with a hint of sweetness and citrus that paired beautifully with the fish. This dish delivered an unexpected umami punch, which isn’t something you usually associate with Filipino cuisine, but it worked wonderfully.

Another solid choice was the Tuna Ceviche Rice Cups (S$15). The tuna was fresh, zesty, and citrusy, making for a bright, refreshing bite. It’s the kind of dish that’s light but packed with flavour.

The Octopus Squid Ink Puffs (S$12) were another standout. Crispy with a perfect blend of sweet and sour, the octopus was tender, and the squid ink added a rich, slightly briny note. Paired with crunchy papadum, this dish was all about texture and balance.

For the main course, we tried the Half Chicken with Zucchini Salad (S$36). While the portion was small, the chicken was incredibly tender, juicy, and beautifully smoky. The zucchini salad added a refreshing crunch that balanced out the richness of the meat.

Overall, Kubo Singapore is a fantastic spot if you’re looking for flavorful, upscale Filipino dishes in a cosy setting. The prices are steep, and portions are on the smaller side, so it’s best for sharing. Don’t expect to leave super full, but do expect to have a great time. The staff were incredibly friendly and made me feel right at home. If I won the lottery, I’d probably eat here every day!
