BEST Mexican Food In Bugis: Huevos Singapore Review
Situated along North Bridge Rd, Huevos is easy to spot with its loud orange sign and pumping music. When we arrived at 7.30pm on a Sunday night, the restaurant was quite packed and we could see people laughing, talking, and enjoying their food. The ambience was great!
Most tables were taken up so we had to sit at the bar counter, but we didn't mind because I believe counter seats are the best place to see everything go down. The staff at Huevos welcomed us warmly and asked if we had any dietary restrictions before serving us some Asahi beer!
Our first dish was rolled out within 15 minutes, which was the Beef Quesadillas (S$16) with Birria beef short rib and brisket, chorizo, onions, habanero mayo, and pickled onions. The first thing we noticed was that the portion was decently sized, so we rejoiced silently. My boyfriend and I have the tendency to think that Mexican food is served in small portions, so we were worried that the quesadilla would be too little for us. Thankfully, it wasn't, and also - it was really delicious. The taste of the beef was distinct but not overpowering - almost sweet, especially when paired with the onion slices. The habanero mayo was just perfect - providing a little spice just enough to make you sweat, but not faint. The best part was that the quesadillas were crispy on the outside.
We also had the Chicken Quesadillas (S$13) with chipotle mayo and pico de gallo. This was my favourite dish of the night and if you're a lover of cheesy food, this will blow you away. The hints of spice were just enough to prevent this dish from getting too jelak, and we could taste the different flavours - spicy, sour, and sweet, dancing around in our mouths!
By now, we were both a little full, but the food didn't stop coming. Our next dish was the Birria Beef Tacos (S$16) with short rib, brisket, Spanish onion, and a side of consume or 'beef broth'. If you're wondering why the beef tastes so good, that's because it's been braised to perfection for 48 hours.
Now if you're like us, you would look at the cup of beef broth and wonder if it tastes good. Stop your wondering, because it is. The soup is so satisfying when you take it in sips, and the flavour is strong. Remember to stir well before drinking!
We also had the Elotes (S$8), or Mexican Street Corn. I've tasted lots of corn dishes from different restaurants, but I especially loved this one because it was really sweet. The secret is that this corn is actually a grilled Hokkaido Sweet White Corn, glazed with chipotle aioli and dusted with cotija cheese and fajita seasoning. The taste is also very unique as it is sweet, a little spicy, sour, and even creamy.
Throughout the night, we were accompanied by some Tortilla Chips with salsa Roja and pina salsa on the side. The dips were spicy, zesty, and if you took too much at a time - enough to make you fan your tongue.

Thankfully, some drinks were prepared to help us cool down from the heat. We tried the Horchata for the first time, a kind of Mexican drink made of white rice soaked in water and flavoured with cinnamon. The Horchata had a creamy flavour and was sweet, and the hints of cinnamon made it feel like a festive drink. It also almost immediately soothed our burning tongues.
By the end of the night, my boyfriend and I were full, heavy, and happy. Our experience at Huevos was great - the food was delicious, the service was good, and the ambience was festive. I've always thought Mexican food to be expensive, but the dishes at Huevos were decently priced with generous portions. The most memorable part of this experience was that we got to try so many Mexican dishes that were unique and different, instead of just the regular burritos and tacos. Thanks to Huevos, I can confidently say Mexican food has become my new favourite cuisine.
