Fiasco by JUICE Review: All-Day Gastrobar @ Tiong Bahru

Hey, Faithfuls! I’ll admit—I wanted to hate Fiasco by JUICE, especially when I found out it was at the more gentrified area of Tiong Bahru. My friends wanted to check it out really badly, so I went along with an open mind and was ready to spend a buck.

I gotta say, though, Fiasco by JUICE brings a romantic, understated charm to the neighbourhood. By day, it operates as a quiet cafe where you can grab a coffee and get some work done from 9am to 4pm. Between 11am and 3pm, they serve a lunch menu of signature sandwiches. At night, they serve a dinner menu that features small plates and ever-changing specials.

For appetisers, my friends ordered the Maitake Mushrooms (S$12). Served on a crisp flatbread with a yuzu kosho dressing, this dish was actually a lovely starter. The earthy flavour of the maitake mushrooms paired beautifully with the citrusy, spicy zing of the yuzu kosho. It’s light, bright, and full of umami.

We also tried their Pao de Queijo (S$15), which aren’t your typical gooey cheese balls. Instead, they’re wonderfully cheesy, fried morsels with a slightly dense texture. Served with a jalapeño queso dip, this appetiser is rich, indulgent, and perfect for sharing.

The Bebek Guling (S$12) was our standout dish of the evening. This special, crafted by Chef Haran, transforms leftover duck meat into bite-sized pockets of deep-fried goodness. Paired with sambal matah emulsion and basil mayo, it’s super labour-intensive and runs out quickly. If you spot it on the specials board, don’t hesitate to order it.

Fiasco by JUICE is most known for their Steak Frites (S$35), which is a classic done right—almost. The skirt steak, cooked with sauce au poivre, was a touch chewy but still tender and flavourful. However, the triple-cooked chips absolutely stole the show with their perfect combination of crispiness and melt-in-your-mouth texture.

While the food at Fiasco is undeniably delicious, the portions lean on the smaller side. If you’re a big eater, you might end up spending more—our group shelled out around S$30 per person.

The crowd here is mostly expats, a reflection of Tiong Bahru’s gentrification. But honestly? This is one instance of gentrification I don’t mind. Fiasco makes for a fantastic date-night spot, combining great food with a cosy, intimate vibe. I’d love to come back—when I’m feeling a little fancy, of course.
